I am glued to my laptop and suddenly I realise, it’s too late to cook a proper meal. My stomach gives out a quick reminder with lots of grumbles. I rush to the kitchen and find nothing but some sad-looking veggies. But today is not my veggie day. So what do I do, I fish out the cans from my freezer and google for easy tuna recipes.
I end up with lots of confusing recipes. In a certain ‘fiji style tuna fish recipe’ the man keeps mentioning the ingredients again and again. I give up in frustration and immediately start working on the quick hunger fix project.
So I start with just a few simple ingredients which are usually available in any Indian kitchen and all of these can be bought in any super market selling Indian food.
Let’s do a recap of how I fix myself a nice Indian dinner when in a hurry.
Ingredients-
- one small size Tuna can
- One small onion, sliced in rings
- One teaspoon of mustard seeds
- Two green chillies, finely chopped
- One tablespoon lemon juice
- One one pinches of coriander powder and crushed black pepper
- You can add turmeric if you want a nice colour but it’s not essential
- One tablespoon of tomato sauce
- One teaspoon of oil, use more oil if the tuna is not canned in oil
- 2-3 finely chopped cloves of garlic
- Salt if required, usually the tuna has enough salt
Method-
- Heat the oil in a flat pan
- Crackle the mustard seeds
- Add the chopped chillies and garlic
- Add onions and stir gently as we don’t want to break the onion rings
- Add all the listed spices
- When the onions are transluscent, just pour the tuna into the pan
- Drain the tuna before it goes into the pan if the tuna is canned in salt water.
- Mix it well and cook for about 5 minutes
- Add the tomato sauce, mix it well and cover the pan with a lid
- cook for 5 minutes and remove the lid
- Add lemon juice and cook the whole mixture in low flame until it looks crispy and golden brown
- Garnish with freshly sliced onion rings or chopped coriander leaves
- Eat it with bread or rice. I usually make some ‘daal’ to go with it. A small can serves 3 people.
